When it comes to snacking, Mudders come into their own. And a fail safe has to be peanut butter. The fine people at PhD Nutrition have created these delicious Vegan Peanut Butter Protein Balls. They are perfect for a post-gym pick-me-up or an on the go protein fix any time, any where. And they only take 10 minutes.
Ingredients for 10 balls
100g Peanut Butter
40g Maple Syrup
A pinch of salt
50g 100% Plant Belgian Chocolate flavour
15g cCocoa Powder
1 Smart Bar Plant, chopped into small chunks
Method for ‘baking’
1. Add the peanut butter, maple syrup and salt to a large mixing bowl, and mix well to combine.
2. Add the protein powder and cocoa powder and continue mixing together until it forms a crumbly mixture, then bring together using your hands. Add 1-2 tsp water if needed to help bring the dough together.
3. Divide the dough into 10 even balls, then place a piece of protein bar into the centre and shape the mixture round it.
4. Place your peanut butter packed Vegan Protein Balls onto a tray and pop in the refrigerator to store.
